Strawberry Guava Swirl

Preparation

1. Preheat the oven to 360°F. Place the frozen pastry onto a parchment-lined baking tray. Bake for 18-20 minutes. Let cool thoroughly before proceeding.
2. Pipe the whipped cream cheese in a spiral, starting in the center of the swirl, to cover the top of the pastry
   
3. Finish by topping with the strawberry guava jam and thin slices of fresh Local Florida strawberries.

Strawberry Guava Jam Recipe

1. Prepare ingredients and make strawberry guava puree: Start by removing the ends of the guavas and cutting them in half. Then, remove the stems from the strawberries and cut them into small pieces. Zest and juice the lemon.
2. Next, process guavas and strawberries in a blender with water on a medium setting for 60 seconds. Strain guava pulp into a bowl using a mesh sieve and discard the seeds. This should yield about 1.5 cups of puree.
3. Make Strawberry Guava Jam: Add strawberry guava puree to a heavy-bottom pot with sugar, lemon zest, and juice. Cook over medium heat for 10 minutes, stirring frequently with a wooden or rubber spatula to avoid burning. Jam should be boiling and bubbling while you stir.
4. Reduce the heat to the lowest setting and simmer for an additional 15-20 minutes until the liquid reduces and the jam thickens. When you stir the jam with a wooden spatula, you should be able to see the bottom of the saucepan.
5. Jar your jam: Pour hot jam into sterile jars with lids. Using a knife or chopstick, remove air bubbles on the sides of the jar. Allow the jam to cool in the jar before refrigerating. If refrigerated, the jam should last for at least four weeks.
6. *If you prefer, skip this step and use a ready-made jam.
   

Whipped Cream Cheese Recipe

1. ​​Gather the bowl of your stand mixer and add heavy cream. Beat until stiff peaks form. If using a stand mixer, transfer the whipped cream to another bowl and set aside.
   
2. In a second large bowl or the bowl of your stand mixer, combine softened cream cheese, sifted powdered sugar, corn starch (if using), vanilla extract. Beat until well-mixed and smooth, scraping the sides of the bowl with a silicone spatula as needed.
3. Use a spatula to fold whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.​ ​
