Mini Maple Pecan Duffin

Preparation

1. Preheat the oven to 360°F , place the frozen pastry onto a parchment paper lined baking tray. Allow to thaw for 10-15 minutes. ​
2. Cut in half vertically and roll to form a pinwheel shape. Transfer to a muffin cup or tray for baking
3. Bake for 15-18 minutes. Let cool fully before proceeding.​
4. In the center, pipe the whipped cream cheese, followed by sprinkling on pecan nuts and a drizzle of maple syrup.

Whipped Maple Cream Cheese

1. To the bowl of your stand mixer, add heavy cream, and beat until stiff peaks form. If using a stand mixer, transfer the whipped cream to another bowl and set aside.​
2. In a second large bowl or the bowl of your stand mixer, combine softened cream cheese, sifted powdered sugar, corn starch (if using), vanilla extract. Beat until well-mixed and smooth, scraping the sides of the bowl with a silicone spatula as needed.​
3. Use a spatula to fold whipped cream and yogurt into the cream cheese mixture, being careful not to deflate the whipped cream. Add maple syrup to whipped cream cheese mixture.
